Teresa Johnson opened the Coulter Café in 2016 because of her love of cooking, but she never imagined her attention to comfort food would land the small town eatery statewide recognition.
The Coulter Café’s “Ultimate Omelet” was recently named as one of 10 finalists for the Iowa Egg Council’s Best Omelet in Iowa. The winner will be announced June 3.
“It really threw me for a loop,” she said. “Never in a million years did I expect this.”
Johnson’s “Ultimate Omelet” is loaded with three eggs, a wide array of vegetables, ham and cheese. If customers are extra hungry, she’ll put a serving of her homemade sausage gravy on top.
Johnson said the omelet isn’t a secretly guarded recipe passed down through generations or overly complex, but it comes from a special place.
“I used to make them out camping and I would throw a big batch together when we’d have a big (gathering) at the campground,” she said. “Everyone seemed to like it, so I thought I’d try it here.”
